To help summer along its way I have been eating lots of berries!  I love summer fruit.... whether it be on top of my morning porridge or cooked up in a fruity dessert. When it comes to dessert I love to drizzle my fruit with cream, leaving behind the hot custards for the winter months.

It's so easy to make your own non-dairy cream with a simple dollop of almond paste, you can whip it up to any thickness you choose to serve with anything from a cream scone to a light summer fruit salad.

​​This recipe is another one based around almond paste (can you tell it's my new favourite ingredient!)  The lemony flavour is sweet and refreshing and perfect for summer, you can top with any fruit you fancy though I recommend two things: use robust fruit you can press into the firm top of the cheesecake (i used frozen blueberries) and use lots of fruit- more than i have used in the photos! The fruit gives a lovely light contrast to the dense creaminess of the cheesecake itself and I wish i'd used more.

Nut butter!  ....or more specifically in this case, almond paste- it's just so versatile! You wont miss the cheese on this dish.

This is a delightful fresh summer veg combo with courgette and broad beans dressed with some fresh mint, but you could use this 'nut butter trick' with any risotto flavour base.

​Yes healthy 'nutella' does exist!  This one is dairy free, refined sugar free and made with just three ingredients!

​Almond paste plays another starring role here, so this is unlike 'real' nutella in that it doesn't use roasted hazelnuts, but instead the creaminess of the almond paste and the richness of the coconut sugar combine to create a rich chocolate with subtle caramel tones. The finer you can get the coconut sugar the better since this will help make for a super smooth spread.

Triple almond cranberry cookies

​I love using nut butters to replace the regular oil or butter in baking. These chocolate quinoa cookies are one of my favourite examples of that!

Today I thought I'd go for a different tactic and use the light colour and mild taste of the almond paste to may advantage. The use of almond flour and chunky chopped almonds make these triple almond cookies. A generous helping of dried cranberries makes for a gorgeous sweet and chewy cookies, with little pockets of cranberry sweetness.

Pure almond paste...gets creative!

​You may remember this almond butter ​a few weeks back. Of course it is easy to make your own, but it does require a pretty high powered processor and a supply of almonds and sometimes it's just not practical to make your own....which is a shame since you can do so much with it!

​Almond paste is the more accurate terms for a 'butter' made with blanched almonds. Almond butter (as I recently discovered) more typically refers to blended roasted almonds which brings out the real depth of flavour.​
