Matcha Morning Muffins
/Breakfast sometimes ends up being on the go... packed with oats, banana and a boost of matcha, these are a great way to start the day!
Matcha morning muffins
Makes approximately 6 muffins
Ingredients:
- 1 cup oats
- ½ cup oat flour (ground oats)
- 2 tsp baking powder
- 1 tbs matcha powder (we use our culinary grade matcha)
- ¼ cup coconut sugar
- 2 mashed bananas (reserve approximately 1/3 for ‘coins’ on top if desired)
- ¼ tsp vanilla powder
- ¼ cup coconut oil- melted
- 2 tbs chia seed
- 1 cup non-dairy milk
Method:
Pre-blend some of the oats to make a flour and mix with the remaining dry ingredients in a medium bowl. Mash the banana adding the melted coconut oil, chia seed and vanilla to it.
Add the banana blend to the dry ingredients along with one cup of non-dairy milk. Mix well to give a thick batter.
Spoon into cupcake or muffin cups adding an extra banana slice on the top if desired.
Bake at 180C for approximately 20 mins until golden on top and cooked through. Allow to cool slightly and enjoy!
