Hemp Seed Muffins

Recipe: Hemp Seed Muffins (V/GF/RSF/DF)
makes approx. 6 muffins
Ingredients:
- 130g coconut sugar
- 130g vitaquell butter (preferably)
- 80g coconut flour
- 70g hemp protein powder
- 40g gram flour
- 10g baking powder
- 2 tbsp chia seeds (with 6 tbsp water)
- 5g pink himalayan salt
- 10g vanilla
- 80g shelled hemp seeds (for sprinkling)
- 60g coconut milk powder mixed with 300ml warm water
Method:
Start by mixing the coconut milk powder with the warm water and set aside.
Preheat the oven to 180 degrees.
Then in a separate bowl whisk the butter, chia gel and vanilla.
Next, add the remaining dry ingredients (flours, protein powder, coconut sugar, salt, baking powder) and pour in the coconut milk. Mix on a low speed for about 30 seconds until the consistency is creamy.
Pour batter into muffin moulds and sprinkle with hemp seeds. Alternatively seeds can be folder into the mixture.
Bake at 180 degrees for approximately 30-35 minutes or until a toothpick inserted into the centre comes out clean.
Remove muffins from the oven and place on a wire rack to cool for about 10-15 minutes.
The muffins are delicious warm!
