Chocolate Sunflower High Protein Cookies

It's been a while since we've had a proper cookie recipe and with the new sunflower seed protein powders now in store it seemed a good time to get experimenting with a chocolate version!
These cookies have a great crunch factor... this is down to using the coconut sugar over syrup. I always find that cookies with a 'wet' sweetener are always softer than the 'dry' sugar versions, still lovely- but something to be aware of if a crisp cookie is more your thing!
I used the 55% sunflower seed protein powder which has a neutral flavour and is an excellent high protein flour substitute, it is perfect for recipes where you don't want to risk a flavour clash, but you could use either type, you will just get more of a sunflower taste with the 45% protein powder.
These cookies are low carb, packed with protein and perfect healthy treat, give them a go and enjoy!
Recipe: Chocolate sunflower high protein cookies
Makes approx 10 cookies
Ingredients:
- ½ cup sunflower seed 55% protein powder
- 1 cup blanched ground almond flour
- ½ cup GF oats or quinoa flakes
- ¼ cup coconut sugar (a little extra if needed to taste)
- ¼ cup cocoa powder
- 1 mashed banana
- 1/4 cup coconut oil- melted
Method:
Mix together the dry ingredients. Mash the banana with the melted coconut oil and then add to the dry ingredients, mix well until sticky.
Scoop apricot sized balls onto a lined baking sheet and press down with damp fingers. Bake at 180C for approx 15 minutes until lightly brown at the edges.
