Hot Chocolate 'Power Pudding'

I wanted to share with you one of the best loved recipes and one I personally make time and time and time again. Nourishing, filling and versatile - throw on any toppings you fancy!
It only takes 5 minutes if you have pre-cooked quinoa in the freezer (I do at all times) I also love cinnamon so I used a generous amount but you can reduce this amount or swap for vanilla powder or another spice of choice.
You can also serve this hot or cold, it's delicious chilled and layered up with banana and dairy free yoghurt.
Hot Choc Power Pudding:
Serves 2
Ingredients:
- 2 cups cooked tricolour quinoa (I have pre cooked portions in the freezer at all times for speed)
- 2 cups non-dairy milk of choice
- 2 tbs nut paste
- 4 tbs chia seeds
- 1-2 tsp coconut syrup to taste
- 2 tsp maca powder
- 2 tbs cacao powder
- 2 tsp cinnamon
- Toppings of choice (I used a handful of goji berries and mixed red/black currants plus extra chia)
Method:
Prepare the quinoa if uncooked.
Add the quinoa, milk, nut paste, chia and syrup to a pan and simmer on the stove for a few minutes until well mixed and warmed through. Turn off the heat and add the remaining ingredients, stir to mix well.
Spoon into bowls and add the toppings of choice. Eat immediately or chill half for eating later!
