High Protein Chocolate Cookies

I was excited to create these cookies. Not least because I love an experiment but largely because it was a great opportunity to try the new hemp pro max 72% protein powder, a great plant based protein source- I believe to be one of the highest form of hemp protein on the market.
These cookies are slightly crisp on the outside and soft and dense on the inside (don't expect a crisp cookie throughout). They are not at all 'claggy' or dry like many protein snack products can be and these bring together both almonds and hemp for an abundance of heathy foods to fill you up and fuel you day.
I tested these cookies on a friend who is a personal trainer and they received the seal of approval! Give them a try and let me know what you think.
Recipe: High protein chocolate cookies
Makes approx. 10 cookies
Ingredients
- ½ cup hemp pro max 72% protein powder
- ½ fine high protein almond flour
- ¼ cup regular blanched ground almond flour
- ½ cup coconut sugar
- ¼ cup cocoa powder
- 1 tsp vanilla powder
- 1 tsp cinnamon
- ¼ cup coconut oil
- 1 small banana (approx 70g)
Method
Mix all the dry ingredients together in a medium bowl. Melt the coconut oil and mash with the banana until smooth. Mix the banana mix with the dry ingredients to achieve a soft dough. Roll the dough into a fat log and chill for up to an hour to firm up.
Using a sharp knife slice the dough into 8-10mm thick slices. Lay the slices on a lined baking sheet and bake at 180C for approx. 20 minutes until lightly browned at the edges.
