Christmas Baked Oatmeal

This is one of my favourite recipes, I made it for my family for Christmas brunch last year and I'm very tempted to do the same this year... though something tells me I should probably come up with a new recipe. Still plenty of time for all that!
You'll find this recipe in the Christmas recipe ebook but we wanted to share it here with you too. I love adding in my home-made sugar free mincemeat (also in the ebook!) but this is optional, it just gives an extra festive flavour. You can change up the nuts and fruits as well if you prefer, this is simply the combination I found best for Christmas!

Recipe: Christmas Baked Oatmeal
Serves 2
Ingredients
- 2/3 cup gluten free oats
- 1 tbs ground chia
- 1 cup non dairy milk (coconut milk works really well)
- 3 tbs mincemeat
- ½ heaped tsp each cinnamon and nutmeg (or to taste)
- 1 small nectarine (or any small orange)
- Handful of dried cranberries
- Topping: 2 tbs flaked almonds and a little coconut sugar if desired
Method:
Peel and slice the orange into fingertip sized pieces. Mix all other ingredients together in a small bowl. Spoon into a greased oven dish min. 20x10cm. and press the orange into the top of the mixture. Dust with sugar if desired.
Bake at 180C for approx. 20 mins until the topping is golden. This also tastes great cold the next day!
