Chocolate Fudge Boulders
/By Natalie @realfoodsource and Jo @includingCake
These chocolate balls are delicious sweet treats that don’t require baking and can be made with or without nuts to suit preferences or lunch boxes! We added dried cranberries for a tart berry flavour but other dried fruits could be substituted. If you'd like to add nuts try finely ground almond or walnuts in place of the oats. Or simply add chunky nuts for added texture- trail mix style boulders! Instead of ground oats you could also use alternative dry ingredients such as quinoa flakes.
Dusting the balls with the raw chocolate powder ensures they don't stick together. Top tip!
Recipe: Chocolate Fudge Boulders
Makes approximately 12 small balls
Ingredients:
- 1 cup dried cranberries (or a mix with raisins or dates)
- 1 banana- mashed
- ½ cup oats (finely ground)
- ¼ cup raw chocolate powder (plus extra to roll in)
Method:
Blend all ingredients in a food processor until lightly chunky and the mix is soft and a little sticky. If it’s too dry add a touch of liquid, if it’s too wet to roll add a little more ground oats or chocolate powder.
With damp fingers, form walnut sized balls and roll each ball in the raw chocolate powder to coat. Keep in the fridge for up to a week.
