Easy Caramel Walnut Slices

Post by Jo @ Including Cake

Simple chunky no-bake slices!

You can of course use cashews or almonds instead of walnuts. I have tried with both and they are great. I just loved the opportunity to use more walnuts, they have a richer deeper flavour than the mild and creamy cashews.

Depending on how much you process the ingredients will depend how smooth or chunky the end result is... personal preference!  Don't leave them too chunky as they may not hold together well. You could also roll these into balls if preferred. I added some caramel extract for an extra rich boost but this is optional as the dates creates a natural caramel-like flavour..

Recipe: Caramel Slices

Makes approx. 15 squares

Method:

Blend all the ingredients together in a food processor until you have a slightly sticky well blended mix.

Press mix firmly into a small (approx 8” square) pan lined with parchment for easy removal. Press the chopped cacao or nuts on top and chill for min. 1 hour before slicing into squares.
