Brownie... but not as you know it
/We love brownies, they are so simple to make and everyone seems to like them. Our daughter is a big fan and they make the perfect treat to add to her lunchbox. The great thing about these brownies are they are nutritious and delicious using coconut oil, almond paste and medjool dates as the main sweetener so we don't feel guilty throwing in two! We prefer them not too sweet but if you prefer a sweeter brownie (taste the mixture before you transfer to the baking square) add a tablespoon of honey or agave syrup or a couple of spoons of coconut sugar.
Ingredients:
- 200g almond paste
- 120g coconut sugar chocolate
- 40g coconut oil
- 3 eggs
- 7 medjool dates
- 1/8 teaspoon baking soda
- 1/8 teaspoon vanilla powder
- 50g walnuts
Steps:
- In a food processor blend the almond paste, baking soda and vanilla powder
- Pulse in the squares of chocolate until the texture of coarse sand then do the same pulsing in the dates (be sure to remove the stones first)
- Pulse in the eggs and coconut oil
- Very quickly pulse in the walnuts (for a second so that nuts remain larger in mixture)
- Spoon mixture into a 8"x8" well greased baking square
- Bake at 180 degrees celcius for 20 minutes
- Allow to cool for 2 hours before serving
