Hello! Sorry it's been a little quiet around these parts, I've been so busy prepping the e-books and filling them with content it's been tricky to bring you up to speed over here!

In amongst all this festive excitement (we're practically in December so I'm allowed to get all Christmassy, right?) We have yet another e-book for you, and this time it's a mini one to accompany the special RFS  'baking bundle.' The recipe featured here today is one of those recipes and it's a simple recipe using simple healthy ingredients to get you through the Christmas chaos.

Recipe: Vegan 'Egg Nog'

“All the classic Christmas flavours in a creamy but healthy Christmas drink...add a little rum if you fancy. Use a greener banana for a more subtle taste!”

Ingredients:

Serves 2

  • 1 frozen banana (approx 80g)
  • 50g coconut milk powder 30% oil dissolved in 50g hot water
  • 150g cold water
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2-3 drops rum extract (or add actual rum to sub a little of the water!)

Method:

Blend all ingredients together until very smooth. Best served immediately.
