Christmas No-Bake Bauble Truffles
/I love no-bake treats... they are so effortless and great for making with kids, plus often they have so many flavour variations you'll never get bored with!
With these bauble truffles you can add cocoa or spices to suit, but the real magic is in the brightly coloured sprinkles! These would look amazing in place of 'hundreds-and-thousands' on a cake or trifle too, don't you think?
Recipe: Christmas Bauble Truffles
Makes approx 16 balls
Ingredients for balls:
- 1 1/2 tightly packed cups dates
- 3/4 cup almonds (or any nuts of choice)
- 1/4 tsp vanilla bean powder or spice of choice such as ginger
- 1/3 cup raw cacao (optional)
Coating:
- 6 tbs desiccated coconut
- 1 tsp beetroot powder
- 1 tsp wheatgrass
- 1 tsp turmeric with 1/4 tsp cinnamon
Method:
Soak the dates and nuts for an hour or so to soften. Drain well then add with all remaining ingredients to a food processor. Process until the nuts are coarse (or to your preferred texture). The mixture should be very sticky but easy to roll into balls. If it is not sticky enough it won’t coat so well.
In three small bowls or cups add approximately 2 tbs of desiccated coconut to each. Add approximately 1 tsp (or start with less if desired) of the powders to each and toss to mix (note turmeric tastes better with a touch of cinnamon alongside).
Roll the date/nut mix into walnut sized balls and fully coat in each of the coloured coconut sprinkles. Keep stored in the fridge before serving.
