Halloween Chocolate Tiffin Slice

Last Christmas we created a delicious tiffin recipe that so many of you loved, so here we have tweaked that recipe a little and added a healthy green icing perfect for healthy Halloween treats! This recipe is also great to make with the kids, they will love getting messy with the green icing!
The green colour comes not from food colouring but from our wheatgrass powder, combined with our vanilla powder and our agave or coconut syrup. To make sure you don't taste the greens - add a little to start with, taste test then add more! Best kept in the fridge so they are nice and firm to nibble on.
Make sure your nuts and fruits are chopped fairly fine as they will hold together more easily when you press them in the pan.
Recipe: Halloween Chocolate Tiffin
Makes approx 16 squares
Ingredients for the tiffin:
- 1 cup dried fruit (I used chopped dates and raisins)
- 1 cup chopped nuts
- 1 cup puffed rice or buckwheat
- 1/2 cup melted dark chocolate couverture
- 1/4 cup coconut oil
- 2 tbs coconut or agave syrup
For the icing:
- 1/4 cup coconut oil
- 2 tsp coconut or agave syrup
- 2 tbs cashew paste
- 1-2 tsp wheatgrass (to taste)
- 1/4 tsp vanilla powder
- sprinkling of white chia seeds- optional
Method:
Add the dried fruit, chopped nuts and puffed rice to a medium bowl and toss to mix.
Melt the dark chocolate and coconut oil and mix with the syrup to blend. Pour the mixture over the dry ingredients and stir to coat evenly.
Press the mixture very firmly into a lined 8" square pan.
For the icing, melt the coconut oil and mash the cashew paste into it with the remaining ingredients to achieve a thick soft and smooth paste. Spread this over the top of the tiffin evenly and sprinkle with chia if desired.
Chill until firm before slicing to serve.
